A traditional recipe subtly recreated by Chef Marcus to bring a taste of his homeland New Zealand to his audience.  Using only New Zealand Greenlipped Mussels with al dente watercress encased in Chefs recreated brine to capture the taste and freshness of New Zealands oceans.
